PRODUCTION PROCESS
Cooking
Agave is cooked in a masonry oven similar to a traditional raicilla oven, using direct fire and wood.
Extraction
The cooked agave is hand-milled using a traditional wooden trough and mallet, preserving an artisanal approach to extraction.
Fermentation
Fermentation takes place in wooden barrels or vats, with the agave fibers remaining throughout the process.
Distillation
