PRODUCTION PROCESS
Cooking
The agave is cooked in traditional stone and brick ovens.
Extraction
Cooked agave is processed through a roller mill to extract the juice.
Fermentation
The agave juice is fermented in stainless-steel tanks, using 100% agave juice in a closed fermentation process without agave fibers.
Distillation
The tequila undergoes double distillation in copper and stainless-steel stills, developing a clean and expressive character.
Maturation
The tequila is rested in American White Oak whiskey barrels for several months, with a minimum of six months according to the commercial specification, allowing the spirit to develop greater depth, softness, and oak character.
