PRODUCTION PROCESS
Agave Cooking
The agave is cooked in a high-pressure autoclave, allowing the sugars and natural character of the mature agave to develop.
Extraction
The cooked agave is processed through a roller mill to extract the agave juice.
Fermentation
Fermentation takes place in open-air stainless-steel tanks, without agave fibers.
Distillation
The tequila undergoes double distillation in stainless-steel pot stills equipped with copper coils.
Barrel Resting
Unlike a traditional Blanco, Elevación 1250 Blanco Rosa is rested for approximately 15 days in wet French oak red-wine barrels previously used for Cabernet Sauvignon from Napa Valley. This brief contact gives the tequila its distinctive blush color and introduces subtle botanical and fruit characteristics.
