PRODUCTION PROCESS

Raw Material: Mature Blue Weber Agave, harvested at 5–7 years of age.

Cooking / Hydrolysis: Slow-cooked in a low-pressure autoclave for 12 hours, followed by 48 hours of cooling and resting in a sealed autoclave.

Juice Extraction: Two-head roller mill.

Fermentation: Slow, spontaneous ambient fermentation driven by wild/native yeast, with no added yeast, in stainless steel tanks.

Distillation: Traditional double distillation in stainless steel stills equipped with copper coils. Specific cuts are made to preserve the spirit’s high-proof character without dilution.
TASTING NOTES
Appearance
Crystal clear, brilliant, and clean, with subtle silver highlights. Its high alcohol content contributes to a dense body and well-defined legs in the glass.
Nose
Intense aromas of mature cooked agave are complemented by subtle notes of fresh agave. Fresh herbal nuances, citrus, white pepper, dried fruit such as mango and caramelized pineapple, and a rich, sweet undertone complete the aromatic profile.
Palate
Powerful, structured, and robust, reflecting its 50% ABV. Sweet roasted agave leads the palate, followed by notes of butter, subtle vanilla, almond, and a pronounced mineral and earthy character.
Finish
Long, elegant, warm, and naturally sweet, with deep persistence of white pepper and caramelized agave.
