PRODUCTION PROCESS

Cooking: Agave is cooked for approximately 3 days in underground pit ovens lined with volcanic stone, using mesquite and oak firewood.

Milling: The cooked agave is hand-cut and chopped using an axe.

Fermentation: Natural open-air fermentation takes place in underground pits lined with oak or sabino wood, using wild yeasts for 2–4 days.

Distillation: Double distilled in a wood-fired copper still, featuring an oak-wood condenser and copper coil.
